Abstract

Probiotics are live microorganisms which when administered in adequate amounts confer a health benefit on the host. Raw materials probiotic Lactobacillus acidophilus are more outstanding dominated by cow's milk. Cow's milk has a few weaknesses so required alternative to other raw materials as a medium for the growth of L. acidophilus. Several studies declare soy milk included Indonesian soy milk could prevent many degenerative diseases with a nutrient composition not significantly different from cow's milk. The purpose of this research is to know the potency of soymilk as nutritious herbal drink. This study was done to determine the ability of L. acidophilus growth on fresh cow’s milk and Indonesian pure soy milk, the ability of growth in various temperature, and in the intestinal tract. The result and conclusions of this research are the number of colonies of probiotic bacteria in pure soy milk significantly more than fresh cow’s milk, L. acidophilus grow well in various pH and intestinal tract. The maximum total plate count (TPC) of L. acidophilus obtained in 10% glucose added.
